Underground Baking Company is Hendersonville's first organic bakery, serving freshly baked artisan breads and pastries four days a week in our shop located in the historic 7th Avenue district downtown. Co-owners Lisa Hoffman and Matthew Hickman opened Underground Baking Co. in 2009 after working a combined 40 years as pastry chefs at top resorts and restaurants across the country. Their hope is to bring you honest bread and high quality treats in a cozy atmosphere.

What's Happening
Our regular spring/summer hours have resumed. We're now open Wednesday-Saturday starting at 9 a.m. A new bread schedule is available to view and download on the Bread page.

Our Breads
Underground Baking Company's daily breads are made with 100% organic flour milled in North Carolina.
We add NO refined sugars, artificial fats or preservatives, and use only filtered water with very small amounts of yeast.
Our bread undergoes a long fermentation process, which aids in depth of flavor, color and texture. This process also allows the bread to stay fresh for 2-3 days at room temperature.
To keep the bread longer, we recommend freezing them. Most of our breads will keep in the freezer for up to 4 weeks (if not longer). After thawing, refresh bread by toasting or placing in a 375-degree oven for 10-15 minutes. Good as new!
Below is our updated spring/summer 2012 bread schedule with descriptions. In addition to our four daily breads, we offer a rotation of specialty breads four days a week. On occasion, you will find items that are not listed on the schedule, so please stop by our location to see what is available.
Every day we offer a delicious assortment of pastries, including scones, muffins and cookies. Lisa and Matthew are also available for special orders, such as wedding cakes, birthday and celebration cakes, as well as tarts, pies and custom bread orders.
