- Our StoryUnderground Baking Company is Hendersonville's first organic bakery, serving freshly baked artisan breads and pastries four days a week in our shop located in the historic 7th Avenue district downtown. Co-owners Lisa Hoffman and Matthew Hickman opened Underground Baking Co. in 2009 after working a combined 40 years as pastry chefs at top resorts and restaurants across the country. UBC's HOT & FRESH PIZZA NOW AT SOUTHERN APPALACHIAN BREWERY!You can now get our world famous homestyle focaccia pizzas by the slice Fridays and Saturdays at Southern Appalachian Brewery (822 Locust St., just around the corner from us). We'll be serving up three varieties every week, so check the board for the day's selection.

Breads
- Our Breads
Underground Baking Company's daily breads are made with 100% organic flour milled in North Carolina. We add NO refined sugars, artificial fats or preservatives, and use only filtered water with very small amounts of yeast. Our bread undergoes a long fermentation process, which aids in depth of flavor, color and texture. This process also allows the bread to stay fresh for 2-3 days at room temperature.To keep the bread longer, we recommend freezing them. Most of our breads will keep in the freezer for up to 4 weeks (if not longer). After thawing, refresh bread by toasting or placing in a 375-degree oven for 10-15 minutes. Good as new!
Below is our updated spring/summer 2013 bread schedule with descriptions. In addition to our four daily breads, we offer a rotation of specialty breads four days a week. Every day we offer a delicious assortment of pastries, including scones, muffins, brownies, bars and cookies. Lisa and Matthew are also available for special orders, such as wedding cakes, birthday and celebration cakes, and custom bread orders. For more information, please read our new "Cakes" section.

Custom Cakes
- Birthday & Special Occasion Cakes
Our cakes are all made to order, using only the finest ingredients, such as 100% organic flour, local farm fresh eggs and seasonal local fruit.
Each cake is designed and built on an individual basis. If you'd like to order a birthday or special occasion cake, please allow a minimum of 48hrs notice.
Wedding Cakes
The Scoop: We prefer not to "talk cake" over email. If you're planning a wedding, please call us so we can set up a preliminary consultation over the phone or in person.
Rates: Each cake is custom and unique, therefore we have a $500 minimum, which does include local delivery and set up.
Tastings: A non-refundable fee of $50 is required for tasting appointments. That fee will be deducted from the final cost of your cake.
Payment Policy: We ask for a 20% deposit at the time of contract. The balance is due upon delivery. We take cash, checks, MC, Visa & Discover.
Delivery: Our cakes are priced to include local delivery. Additional delivery fee will apply outside of Henderson county.
Special Dietary Needs: We love our wheat, eggs and dairy. Sorry, we don't do gluten free or vegan cakes.
Shipping: We do not ship cakes. As a small local bakery, we prefer you support your local bakers!
